Meatless Mondays:  Vegetarian Chilli

If you like the idea of starting the week without any meat then a lack of top class recipes shouldn’t be an issue. Even if you aren’t used to cooking with just ingredients such vegetables and beans you will soon get the hang of it.

The internet is filled with amazing vegetarian recipes now and it usually only takes a few minutes to find something perfect. Some of them are also really easy to make, like this wonderful Vegetarian Chilli dish we got from It has all the great taste of chilli but without any meat at all.

Vegetarian chilli

Ingredients (serves 6)

A tin of diced tomatoes with juice

1 small, diced onion

A tin of white bean (need to be drained before using)

A tin of chilli beans

A pack of taco seasoning mix

A pack of ranch dressing

8 ounces of shredded Cheddar cheese

12 ounces of vegetarian burger crumbles

The Method

Mix together the onion, tomatoes, chilli beans, white beans, ranch dressing and taco seasoning in a large pot on medium heat. After it comes to the boil bring the heat down to low and mix in the burger crumbles. Keep on heating until the whole thing is well cooked and then serve with cheese on top. What a great way to start the week without any meat but with a warm, filling and incredibly tasty meal.
