Anyone who's aiming to lose weight will love this "Low Carb Pecan Pie" dish as it is both a delicious and healthy treat. Though the dish is best served warm, this low carb version of Pecan Pie can also be eaten even when you just took it out of the fridge. Make sure you bookmark this recipe for a future dinner reference. Now unto the ingredients and method below:

Prep Time: 3 hours

Yields: Makes 6 Servings

Ingredients:

  • 2 (8 ounce) packages cream cheese
  • 1 cup ground pecans
  • 1/2 teaspoon coconut extract
  • 3 tablespoons butter, melted
  • 2 (1 gram) packets no calorie sweetener
  • 1/3 cup boiling water
  • 2 (1 gram) packets no calorie sweetener
  • 1/2 cup heavy cream
  • 1/3 cup cold water
  • 2 tablespoons ground pecans

Method:

1. Combine the pecans with butter, ½ tsp of coconut extract and 2 packets of sweetener.

2. Pour the mixture into 8 inch pie plate and press the mixture firmly.

3. Refrigerate for about 2 hours or until it gets firm perfectly.

4. In another bowl beat the heavy cream with 2 packets of sweetener. 

5. Keep beating until it forms soft peaks.

6. In a separate bowl, combine the gelatin and boiling water and dissolve the gelatin.

7. Add in the cold water and mix using an electric beater.

8. Add in the cream cheese and beat until it becomes smooth.

9. Mix in the whipped cream to it and pour on top of the refrigerated pie plate.

10. Sprinkle 2 tbsp of ground pecans on top and fridge for another hour. 

11. Serve cold.
