Chipotle Sweet Potato Taco with Black Beans and Guacamole #WednesdaySupper

What's not to love about this "Chipotle Sweet Potato Tacos" recipe topped with some black beans and guacamole? It's essentially a hearty meal that will sustain you through the cold winter days. See ingredients and method below:

Prep Time: 15 minutes

Cooking Time: 25 minutes

Yields: Makes 4 Servings

Ingredients (Sweet Potatoes):

1 tablespoon olive oil

1/2 medium red onion, diced

1 medium sweet potato, cut into 1/4" cubes

1/2 cup black beans, drained and rinsed if using canned

1 chipotle in adobo sauce

2 tablespoons adobo sauce

1 tablespoon honey Juice from one lime

Ingredients (Guacamole):

1 avocado

1/4 medium onion, diced

1 clove garlic, minced

1/4 serrano pepper, diced

1/4 teaspoon salt juice from 1/2 lime

handful of cilantro

Additional Ingredients:

4 taco shells (hard or soft)

extra cilantro, for topping


1. Begin by heating the olive oil over medium heat in a skillet. Add onions and let it cook for 3-4 minutes until softens. Stir in the sweet potatoes and continue to cook for an additional 3-4 minutes.

2. Combine the chipotle, adobo sauce, honey and lime juice in a mortar and pestle. Then break apart the chipotle into small pieces and pour into the pan with the sweet potatoes. Reduce the heat while cooking into medium-low. Add beans and continue to cook until the sweet potatoes have softened.

3. Scoop out the insides of the avocado while sweet potatoes are still being cooked. Then add onions, garlic, pepper, salt and lime juice. Mash the guacamole until it has your favourite consistency. Next, fold in tomato and cilantro.

4. Scoop a spoonful of guacamole onto the bottom of the taco and layer it with some sweet potato mixture. Sprinkle an extra cilantro and serve.
